Biscuit Love and now Pizza Love: The founders of one of Nashville’s hottest brunch spots bringing wood-fired pizza to Hillsboro Village

The pizza love is VERY real. From the pizza emoji to all the pizza slogan t-shirts (including one of my wife’s favorite tees that says “you had me at pizza”), it’s no secret that pizza is now a staple in any foodie’s diet. With so many great pizza spots in Nashville, it’s tough to know where to go, but the owners of Biscuit Love, famously known for their crazy long brunch lines in The Gulch (yeah, it’s that popular) do pizza right with their new Hillsboro Village restaurant, ‘Za wood fired pizza.

Karl and Sarah Worley started with Biscuit Love as a food truck in 2012. They now have 3 brick-and-mortar locations across Nashville. On a recent trip to Italy, they discovered that Pizza in Italy is much like biscuits in the South. It brings people together around the table no matter the occasion. Armed with their newfound inspiration after discovering this parallel between Italian and Southern American food culture, they opened one of my new FAVORITE pizza joints.

Being the pizza fanatics we are, when my wife, Jackie, and I heard about this new spot, we had to check it out. As excited as I was about pizza, I had to ask: What makes this place different than all the other incredible pizza spots in Nashville? I’ll tell you what: it’s called 4 day fermented pizza dough, and it’s AMAZING! You absolutely MUST get the ricotta dip with honey and wood-fired pizza dough. It’s exactly what it sounds like, but the dough is something to be cherished. It has this springy pull that you just don’t get from traditional yeast doughs, and the chewiness is just what sets them apart. Drag that pizza dough through the ricotta honey dip and it is something like a carb-filled heaven. It’s incredible…trust us.

Don’t stop there. They have nine handcrafted pies with locally sourced ingredients. They really are something special. With a pizza like “That Hipster Place In Brooklynn”, it’s easy to see why we fell hard for this slice of Italian inspiration. It’s a red sauce pizza with sopressata, mozzarella, and hot honey (I never knew I loved honey and pizza things so much!). We had to try the white sauce pizza as well, so Jackie picked out the “Thoroughbred Hillbilly”. Layered with white sauce (of course), mozzarella, Benton’s prosciutto, and dressed arugula, it was LOADED with flavor. We left so fat and happy, there was no denying this was instantly moved to our Nashville Pizza short list. To top it off, sparkling water is available on tap and on the house.

You can take out or hang out, at the bar, at the table, or on the patio. You can find it sharing a wall with The Grilled Cheeserie and sharing a building with their own Biscuit Love. Go check it out, but don’t wait too late. Since their dough is fermented for 4 days, once they are out, they are out!
