These Honey Sriracha Smoked Wings are a go-to in our house for any game day gathering! They are sooooo easy, super tasty, and DEFINITELY a crowd-pleaser! Even if your team loses *womp womp*, your tastebuds can win with these sweet & spicy wings! (And yes, I’m corny and I like it.)
PRO TIP: Make it easy on yourself by buying the package of wingettes, not the whole wings. If you buy the whole chicken wings, you’ll need to use a cleaver to separate them for even cooking. Who even owns a cleaver nowadays…? For now, we’ll just call them what they are: wings. Also, make sure to buy enough wings for everyone…sharing is caring.
LET’S GET TO IT!
Total Time: about 1 hour
INGREDIENTS:
WINGS:
4-6 pounds of Chicken *Wingettes*
Salt & Pepper
HONEY SRIRACHA SAUCE:
3/4 cup of honey
1/4 cup of sriracha (less if you want a more mild sauce)
2 cloves of garlic, minced
Juice from half a large lime
5 teaspoons tapioca flour
Salt & Pepper to taste
EXTRA NECESSITIES:
A Smoker (pellet smoker, Big Green Egg, etc.)
Long Grill Tongs (please grill responsibly)

Okay, settle down, Beyonce. Now, we’re ready to cook!
1. Fire up the smoker to 300 degrees.
2. While the smoker is heating up, sprinkle salt & pepper on all sides of the wings.
3. When the smoker is up to temp, place the seasoned wings on the grate. Space them evenly apart so the smoke can reach all sides of the wings! We love that smokey flavor!
4. Smoke the wings for about 30 minutes. While you’re waiting on these to cook, let’s make the sauce!
5. Combine all the sauce ingredients except the tapioca starch in a large bowl. Stir until combined.
6. Spoon some of the mixed sauce into a small bowl with the tapioca starch. Stir until no lumps remain! (If you still have lumps, add more of the combined sauce from the large bowl. The idea is to make a smooth slurry).
7. Take the slurry (tapioca starch mixture) and pour it back into the large bowl with the rest of the sauce. Stir until combined. The mixture will thicken slightly.
7a. Feel free to taste the sauce and add more honey or sriracha until you get the flavor you like! We added a little bit more honey and another squeeze of lime juice!
8. When the wings have a good color on them, drop them in batches into the large bowl, toss them in the sauce, and place them back on the smoker.
**CAUTION: Your mouth will begin to water at this point. The smell is intoxicating! Patience is key!**
9. Crank the heat up to 350 degrees. Continue to smoke just long enough to cook the sauce on the wings, about 15 minutes.
10. The wings should look nice and caramelized at this point. Take the wings off in batches and drag them through the sauce one last time before putting them on a serving platter.
11. DEVOUR! And don’t forget to share the wings with your friends while you watch the game! Wings this delicious deserves to be shared!
